The island of Chios is well-known throughout the world for the production of mastic, a natural resin which comes out of the trunk and branches of the mastic tree after they carve them up with a sharp tool. It has recognized therapeutic qualities and it has been used since antiquity for these purposes. Nowadays, it is used in foods, like sweets, marmalades, ice creams, biscuits, pasta, sauces and chocolates. It is also used in cosmetics, aromas, soaps, aromatic candles, essential oils and of course in liqueurs.
